Ellipaya Vaampodi (Garlic Carom seeds powder)

Andhra Pradesh state in India is divided into three main parts, Andhra, Telangana and Rayalaseema. People belonging to these parts speak the same telugu language but they have their own style. Certain things are called differently based on area. In Telangana area, garlic is called ellipaya/elligadda.

As all know, ajwain is good for digestion. In telugu ajwain is called vaamu. Generally vaampodi is made and fed to kids who are suffering with constipation problem. That is made by dry roasting ajwain in a hot pan and powder it with little salt, thats it. I made this powder by adding few more ingredients to make it flavorful. Having this a little with hot rice as the first item is good for digestive system. Please note that this tastes so good that you might get tempted to have more, but resist yourself otherwise you will end up having loose motions. :-)


Here is how you make it:


1 1/2 tbsp chana dal (senaga pappu)
1 tbsp urad dal (minapappu)
2 tsp ajwain seeds
1/2 tbsp coriander seeds
1/2 tsp cumin seeds
6 dry red chilies (adjust as per your taste)
5 to 6 garlic cloves
salt as per taste

Dry roast chana dal, urad dal, coriander seeds and cumin seeds in a pan. Take them into a mixie jar. Add a drizzle of oil in the same pan and add red chillies and garlic cloves. Fry them for a second and take them into the same mixie jar. Let them cool completely. Add salt and grind to a fine powder.

This tastes good with hot steamed rice and a tsp of ghee.
